Gluten Free, Chocolate Chip, Coconut Cookies

Ingredients
Wet
3/4 cup olive oil
1/2 cup coconut sugar (or brown sugar for a sweeter cookie)
2 tablespoons maple syrup
2 eggs + 1 egg yolk
2 teaspoons vanilla extract
Dry
3 cups almond flour
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons hemp seeds
Add-ins
1/2 cup chocolate chips
1/2 cup shredded coconut
Method
Preheat oven to 180°C. Line a large baking sheet with parchment paper.
In a large bowl, whisk together the olive oil, coconut sugar, maple syrup, eggs, egg yolk, and vanilla until well combined.
In a separate bowl, whisk together the almond flour, baking soda, and salt.
Add the dry ingredients to the wet ingredients and stir until a dough forms.
Fold in the chocolate chips and shredded coconut.
Scoop the dough into 12 equal balls and place on the prepared baking sheet, spacing them a few centimetres apart. Flatten slightly with your palm.
Bake for 9-11 minutes, until the edges are slightly golden brown.
Allow cookies to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
Store in an airtight container.
