Gluten Free, Chocolate Chip, Coconut Cookies


Makes: 12 cookies

Bake time: 11 minutes

Ingredients

Wet

  • 3/4 cup olive oil

  • 1/2 cup coconut sugar (or brown sugar for a sweeter cookie)

  • 2 tablespoons maple syrup

  • 2 eggs + 1 egg yolk

  • 2 teaspoons vanilla extract

Dry

  • 3 cups almond flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3 tablespoons hemp seeds

Add-ins

  • 1/2 cup chocolate chips

  • 1/2 cup shredded coconut

Method

  1. Preheat oven to 180°C. Line a large baking sheet with parchment paper.

  2. In a large bowl, whisk together the olive oil, coconut sugar, maple syrup, eggs, egg yolk, and vanilla until well combined.

  3. In a separate bowl, whisk together the almond flour, baking soda, and salt.

  4. Add the dry ingredients to the wet ingredients and stir until a dough forms.

  5. Fold in the chocolate chips and shredded coconut.

  6. Scoop the dough into 12 equal balls and place on the prepared baking sheet, spacing them a few centimetres apart. Flatten slightly with your palm.

  7. Bake for 9-11 minutes, until the edges are slightly golden brown.

  8. Allow cookies to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.

  9. Store in an airtight container.
